This FAST FOOD SUPPER thought comes from William Kruidenier: "One of my favorite fast-food supers is to pop a baking potato in the oven and let it bake while I'm doing other things. A few minutes before the potato is done, I chop up 5-7 raw toppings (tomatoes, onions, avocado, broccoli, squash, cauliflower, raisins—almost anything you would put on a salad. Then split open the potato, load on the toppings, season with extra virgin olive oil, herbs, a little Bragg's, and/or some healthy salad dressing. Much faster than making a full salad, and plenty of raw veggies as well." ENJOY!
